350 grams mixed Berry
1 small Banana
4 Tbsps Orange liqueur
1 packet Vanilla sugar
For the dough
30 grams Pastry flour
70 milliliters milk
1 egg
1 pinch salt
clarified butter (for cooking)
brown sugar (for garnish)

Preparation steps

1.

Stir the flour and milk together. Whisk in the egg and salt until a smooth batter forms. Let rest for 30 minutes.

Stir the batter well. Add milk, if necessary, to thin out the batter.

Preheat the oven to 70°C (approximately 160°F). Heat a frying pan with the clarified butter. Add 1/4 of the batter, and cook the crepe on each side for 3 minutes, until golden brown. If necessary, add more butter. Cook the other 3 crepes, keeping them warm in the oven as you go.

Bring 1/3 of the berries to a boil with 2 tablespoons of water, the orange liqueur, and the vanilla sugar. Remove from the heat and pass through a strainer.

Peel the banana and cut into slices.

6.

Divide the fruit and berry sauce to one half of the crepes. Fold the other side over it, and place onto plates. Serve, garnished with the brown sugar.
