- 2 cups all-purpose flour
- 1 Tbsp Baking powder
- ½ cup caster sugar
- ⅓ cup dairy-free margarine (melted)
- ⅜ cup Soy milk
- 2 eggs (beaten)
- 1 cup Blueberries

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Place 10 paper cases in a muffin tin.
2.
Sift the flour and baking powder into a mixing bowl and stir in the sugar.
3.
Whisk together the margarine, soya milk and eggs until blended.
4.
Add the milk mixture to the flour and stir until just combined. Fold in the blueberries.
5.
Spoon into the paper cases and bake for 15-20 minutes until golden and springy to the touch. Place on a wire rack to cool completely.
