1 duck leg (2 kg, ready to cook)
salt
freshly ground pepper
2 tsps dried thyme
500 milliliters Chicken broth (or more, as needed)
2 Tbsps honey
4 small Oranges
2 Oranges (Juiced)

Preparation steps

1.

Season duck inside and out with salt, pepper and thyme. Place into a large roasting pan and roast in preheated oven at 200°C (approximately 400°F) for about 1.5 hours. Gradually add broth to the pan.

Rinse oranges in hot water, halve and add to the pan ½ hour before the end of cooking. Before that, skim fat from the pan.

3.

Whisk honey with some cooking juices and brush duck with the mixture 10 minutes before the end of cooking. Remove duck from the oven. Reduce sauce, if needed, and strain through a sieve. Combine with orange juice and bring to a boil, season with salt and pepper. Simmer down, if necessary.  

4.

Arrange duck with orange sauce on a platter and serve.
