- 8 Flounder (each 80 grams)
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- 4 Tbsps clarified butter
- 4 slices Rye bread
- 4 Lettuce
- 1 handful Arugula
- 40 grams butter
- 1 handful Shamrock

Preparation steps
1.
Rinse the fish fillets, pat dry, drizzle with lemon juice and season with salt and pepper on both sides. Melt some butter in a large pan (or use two pans) and cook the fish fillets 2-3 minutes on one side over medium heat. Turn over and cook on the second side until done, 1-2 minutes.

Toast the slices of toast in the toaster until crispy. Rinse the lettuce and arugula and shake dry. Spread the bread with butter and top each with a lettuce leaf and a little arugula. Then place two fish fillets on each and garnish with the clover.
3.
Serve with gooseberry chutney with a dab of sour cream.
