- 2 ½ cups all-purpose flour
- ¾ cup cocoa powder
- 2 tsps ground ginger
- ¼ tsp grated Nutmeg
- ¼ tsp cloves
- 2 tsps Baking powder
- 1 tsp baking soda
- ¾ cup unsalted butter
- 1 ¾ cups light brown sugar
- 5 Tbsps apple sauce
- 3 eggs (beaten)
- ½ cup cream (48% fat)
- 15 ozs Pumpkin puree
- For the icing
- 2 cups powdered sugar
- 2 tsps lemon juice
- 1 egg white (lightly beaten)
- To decorate
- colored Sugar pearls
- 1 red and white striped Candy
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Lightly grease a 23cm|9" tube or tall Bundt cake tin.

Sift together the flour, cocoa powder, spices, baking powder and bicarbonate of soda.

Beat together the butter, sugar, apple sauce and eggs until blended. Stir in the cream and pumpkin.

Stir in the flour mixture until just blended. Spoon into the tin and spread evenly.

Bake for about 40 minutes, until a skewer inserted into the centre of the cake comes out clean. Cool in the tin on a wire rack for 15 minutes.

Invert the cake onto a serving plate.

For the icing: sift the icing sugar into a bowl and beat in the lemon juice and enough egg white to make a smooth thick icing.
8.
Put into a piping bag and pipe lines around the cake, as in the photo.
9.
Sprinkle with sugar pearls and place the sweet on top of the cake, then leave to set.
