- 2 kilograms gherkins (as close to the same size as possible)
- 30 grams salt
- 1 tsp white peppercorns
- 1 tsp allspice
- 1 Tbsp Mustard seed
- 2 dried red chili peppers (if desired)
- 750 milliliters Wine vinegar
- 100 grams sugar

Preparation steps

Rinse cucumbers well and prick each several times with a needle. Place in a bowl, sprinkle with salt and add water to cover. Let stand 24 hours. Drain water, rinse cucumbers and pat dry.

Layer cucumbers in jars. Add peppercorns, allspice, mustard seeds and chile peppers. In a pot, bring vinegar, 750 ml (approximately 3 cups) water, and sugar to a boil. Pour immediately over cucumbers. Seal jars tightly and keep cool. Let stand 4-6 weeks before eating.
