- 1 cup self-rising flour (scant)
- 1 tsp baking soda
- ¼ tsp ground cinnamon
- 1 egg
- ⅔ cup milk
- vegetable oil (for deep frying)
- 3 Banana
- sugar (for sprinkling)

Preparation steps
1.
Put the flour, bicarbonate of soda and cinnamon into a mixing bowl.
2.
Make a well in the centre and add the egg and half the milk and mix well to a smooth batter. Gradually beat in the remaining milk.
3.
Heat the oil in a deep heavy-based pan.
4.
Peel the bananas and cut in half lengthwise and then cut each piece into three horizontally.
5.
Dip the banana pieces in the batter and then gently lower into the hot oil and fry in batches until golden brown. Drain on absorbent kitchen paper and sprinkle with sugar.
