Preparation steps

Combine 50 grams (approximately 1 3/4 ounces) of sugar with 2 tablespoons water and caramelize in a small pot. Pour syrup immediately into 6 ramekins, about 125-150 ml (approximately 1/2-2/3 cup) and spread evenly over bottom.

Preheat oven to 180°C (approximately 350°F).

Pour milk with a pinch of salt and remaining sugar into a saucepan and slowly heat. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Add seeds and pod to milk. Boil for a short time then remove from heat.

Whisk eggs together. Remove vanilla pod from milk. Add milk into eggs in a thin stream, stirring constantly.

Pour milk mixture into ramekins over top of caramel syrup and put into a baking dish. Pour hot water into dish, about 1.5 cm (approximately 3/4 inch) up the sides of the ramekins. Bake in preheated oven about 20-30 minutes.

Remove ramekins from oven and allow to cool. Then refrigerate at least 6 hours to cool completely. When ready to serve, dip bottom of ramekins briefly in hot water, cut around edge of cream with a knife, turn onto plate and serve.
