- For the caramel
- 75 grams sugar
- 2 Tbsps water
- 1 tsp lemon juice
- For the bacon
- 150 grams sugar
- 350 milliliters water
- 1 lemon (peel in long strips)
- 10 egg yolks
- 2 eggs
- 6 small Metal dessert molds (each 150 ml)

Preparation steps
1.
Melt sugar, put in water and lemon juice, simmer light brown to caramelize. Pour the caramel into the ramekins.
2.
Cook water, sugar and lemon zest for about 15 minutes. Remove from heat.
3.
Preheat oven to 175°C (350°F). Whisk together yolks and eggs. Pour in the sugar syrup, stirring constantly. Pour the thick mixture into the ramekins.
4.
Solidify in a hot water bath in the oven for about 40 minutes.
5.
Allow to cool, turn out on plates. To serve, surround with fruits (figs, grapes, peaches).
