- 500 milliliters dry white wine (Riesling)
- 500 milliliters Veal broth
- 4 shallots
- 3 Sage
- 400 grams Whipped cream
- salt
- freshly ground peppers
- 1 pinch sugar
- 2 tsps Sage flower
- 2 tsps lemon zest

Preparation steps
1.
Peel the shallots and finely chop. Place in a saucepan along with the wine, broth and sage leaves. Bring to a boil then reduce the heat, cover and simmer for about 30 minutes.

Strain the soup into a clean saucepan.
3.
Whip the cream and fold into the soup. Season with salt and pepper and add the sugar. Serve sprinkled with sage flowers and lemon zest.
