Pumpkins provide vitamin A and many plant dyes, which protect the body's cells from damage. Vitamin A is especially important for strong vision. 

Serve with some bread and a side salad for a complete meal.

6 cups Chicken broth
2 cups large, fresh Pumpkin (hollowed; optional for serving)
1 cup onions (finely chopped)
1 clove garlic cloves (minced)
1 ½ tsps salt
½ tsp thyme
½ tsp peppers
½ cup whipping cream
1 large, fresh Pumpkin (hollowed; optional for serving)
½ cup Pumpkin seed (for garnish)
fresh Chervil (for garnish)

Preparation steps

In a large heavy saucepan, heat all ingredients except cream; bring to a boil. Reduce heat and simmer, uncovered for 20 minutes. Slowly add cream and cook until heated through, about 5 minutes. When ready to serve, garnish with pumpkin seeds and chervil.

If serving in hollowed pumpkin, warm hollowed pumpkin in a 350º F oven for 20 minutes, prior to serving.
