- 2 Tbsps butter
- 500 grams fresh or frozen Peas
- 750 milliliters Vegetable broth
- 100 grams Crème fraiche
- 1 pinch sugar
- salt
- freshly ground peppers

Preparation steps

Rinse the scallions, pat dry, cut the white portions into large pieces and thinly slice the green portion. Heat the butter in a large pot and sauté the scallions and peas until softened. Stir in the vegetable broth and simmer for about 10 minutes. Stir in the creme fraiche and season to taste with sugar, salt and pepper. Puree the mixture with an immersion blender and strain through a fine mesh sieve.

Ladle the soup into bowls and garnish with sliced radishes and chopped chives.
