- 1 ⅓ cups water
- 1 cup clam juice (bottled)
- 2 bay leaves
- 1 Tbsp butter
- 1 small sweet onion (finely chopped)
- ¼ cup Celery (finely chopped)
- 3 Tbsps flour
- 2 cups milk
- 3 Tbsps Tomato paste
- ¼ tsp salt
- freshly ground Black pepper
- 2 Tbsps dry sherry

1 Pot mit Deckel, 1 Measuring cups, 1 Fork, 1 Wooden spoon, 1 Sieve, 1 Fine-mesh sieve, 1 Slotted spoon, 1 Ladle, 2 Kitchen towels, 4 canning jars (à 400 ml), 1 Pot, 1 Bowl
Preparation steps
1.
Remove the meat from the lobster, chop finely and set aside.

Place lobster shells in a large pot; add water, clam juice, and bay leaves. Simmer over medium-low heat for 30 minutes. Strain and reserve liquid.

Melt butter in a large saucepan. Add onion and celery; saute foe 3 minutes. Sprinkle flour over onions and cook for 1 minute, stirring frequently.
4.
Add the reserved stock, milk, tomato paste, and season with salt and pepper. Cook over medium heat for 10 minutes to thicken, stirring constantly.
5.
Add lobster meat. Remove from heat source, add sherry and stir to combine. Divide between bowls. Garnish bowls with lobster shells, if desired. Serve.
