Ingredients

For the cake
½ cup butter
1 cup caster sugar
2 eggs
1 cup Sour cream
1 lemon (zest and juice)
2 ½ cups self-rising flour
½ tsp Baking powder
For the cream cheese topping
1 cup Cottage cheese
1 cup cream cheese
cup Sour cream
1 ½ cups condensed milk
½ tsp lemon juice
1 ½ cups Blueberries
To decorate
¾ cup Blueberries

Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease and line a rectangular baking tin (approximately 26 cm x 20 cm|10 1/2" x 8"

Beat the butter and sugar together in a bowl until light and fluffy, then beat in the eggs, one at a time, until well combined.
3.
Stir in the soured cream, lemon juice and zest, flour and baking powder until blended.
4.
Spoon the mixture into the tin and bake for 40-45 minutes, until a skewer inserted into the cake comes out clean. Cool in the tin.
5.
For the cream cheese topping: whisk together the cottage cheese and cream cheese with an electric whisk until blended.
6.
Beat in the the soured cream, condensed milk and lemon juice. Carefully fold in the blueberries and pour onto the base. Chill for at least 3 hours until set.
7.
Cut into squares and decorate with blueberries.
