- 600 grams fresh, mixed Wild mushroom
- 2 shallots
- 2 Tbsps chopped parsley
- 4 Tbsps clarified butter
- 1 l Chicken broth
- 100 grams acidic Whipped cream
- 150 grams Crème fraiche
- 4 egg yolks
- salt
- freshly ground peppers
- 2 Tbsps scallions
Preparation steps

Rinse and chop the mushrooms. Peel and finely dice the shallots.

Heat the clarified butter in a large pan. Cook the mushrooms, shallots and parsley for 3-4 minutes. Pour in the broth and boil for about 10 minutes. Season with salt and pepper and allow to simmer. Add the sour cream, heavy cream and egg yolks. Stir well.
3.
Heat the soup again, but do not cook (at risk of clotting the yolks). Stir in the chives and season to taste. Serve in warm bowls.
