- 500 grams button Mushroom
- 2 shallots
- 1 Tbsp butter
- 2 tsps lemon juice
- 200 milliliters vegetable stock
- 50 milliliters white wine
- 200 grams Crème fraiche
- 2 parsley
- salt

Preparation steps

Peel and chop the shallots. Saute in hot butter. Rinse the mushrooms, set aside 100 grams (approximately 1/3 cup), and coarsely chop the rest. Sprinkle the mushrooms with lemon juice. Add the chopped mushrooms to the pot and saute until the liquid has evaporated. Puree the mushrooms and mix with the vegetable stock and white wine. Bring to a boil again.

Stir in the sour cream and season with salt and pepper. Slice the remaining mushrooms finely and scatter over the plates. Serve the soup garnished with parsley leaves.
