- For the muffins
- 5 eggs (separated)
- ⅔ cup sugar
- 1 tsp vanilla extract
- 1 pinch salt
- 1 cup self-rising flour
- For the topping
- 1 cup cream (48% fat)
- 1 Tbsp powdered sugar
- For the decoration
- 0.333 cup semi-sweet chocolate (60% cocoa solids; melted)
- 12 Chocolate curl
Preparation steps
1.
for the muffins: heat the oven to 180C,350F, gas 4. Place paper cases in a 12 hole muffin tin.

Whisk the egg yolks with the sugar and vanilla until fluffy.
3.
In a clean bowl whisk the egg whites with the salt until stiff and fold into the egg yolk-sugar mixture until incorporated.

Sift the flour into the mixture and and fold in gently until just combined. The mixture will be lumpy.
5.
Pour into the paper cases and bake for 20-25 minutes until risen and firm. Cool in the tins for 5 minutes then place on a wire rack to cool.
6.
For the topping: whisk the cream with the confectioners' sugar until thick. Put into a piping bag and pipe onto each muffin.
7.
To decorate: drizzle with melted chocolate and decorate with chocolate curls.
