- 16 ozs Green beans (trimmed)
- salt
- 1 red Bell pepper (seeds removed and thinly sliced)
- 8 ozs cooked Crabmeat
- 4 scallions (sliced)
- 1 Tbsp chopped cilantro
- 1 Tbsp chopped mint
- ¼ cup Peanut butter
- ¼ cup Coconut milk
- 1 unwaxed Lime (juice and finely grated zest)
- 2 Tbsps Fish sauce
- 1 small, red chili pepper (seeds removed, finely chopped)
- ¼ cup chopped, roasted Peanuts
- To garnish

Preparation steps
1.
Cook the green beans in a pan of boiling salted water for about 5 minutes, until crisp-tender. Drain, then rinse under cold running water and drain again.
2.
Place the green beans, red pepper, crabmeat, spring onions, coriander and mint in a large bowl.
3.
Mix together the peanut butter, coconut milk, lime juice and zest, fish sauce and chilli until well blended.
4.
Toss the dressing and salad to coat and place on serving plates. Divide the peanuts between the plates and garnish with coriander.
