- 4 cups Penne
- 1 cup Buffalo mozzarella (drained and cut into chunks)
- ¼ cup olive oil
- 1 red pepper (seeded and sliced)
- 1 yellow pepper (seeded and sliced)
- ⅔ cup kalamata Olives (pitted)
- ⅓ cup black Olives (pitted and sliced)
- cherry Tomatoes (to garnish)
- oregano (to garnish)
- 1 Tbsp dried Basil (to garnish)
- salt
- peppers

Preparation steps
1.
Cook the pasta in a large saucepan of boiling, salted water until 'al dente'; usually 8-10 minutes.
2.
Drain and transfer to a large mixing bowl. Add the olive oil and seasoning and toss well.
3.
Add all the remaining ingredients apart from the dried basil and oregano leaves and toss well.
4.
Transfer to a serving bowl and garnish with dried basil and oregano leaves.
