- 400 milliliters Coconut milk
- 100 milliliters Coconut cream
- 80 grams sugar
- 500 grams fresh Strawberries
- 400 grams Watermelon
- 1 Tbsp lemon juice
- 200 milliliters Apple juice
- mint (for garnish)

Preparation steps

Put tapioca in a bowl, cover with hot water and soak for about 10 minutes.

Combine the coconut milk, cream and 4 tablespoons sugar and boil, then lower heat, add the tapioca and let simmer for about 20 minutes while stirring, until the pearls are transparent. Remove from the heat and let cool.

Rinse the strawberries, drain and chop. Cut the melon into cubes. Puree both with the lemon juice, the remaining sugar and some apple juice in a blender. Stir in the tapioca pearls and add apple juice to the desired consistency. Chill the soup at least 1 hour before serving. Distribute in bowls and serve garnished with mint.
