- 800 grams cold Roasted pork fillet
- 1 shallot (finely diced)
- 1 garlic clove (finely chopped)
- 50 grams Spinach
- 1 splash white wine
- ½ bunch parsley
- 1 Tbsp olive oil
- 100 milliliters Whipped cream
- 2 Tbsps Crème fraiche
- salt
- freshly ground peppers
- Nutmeg (ground)

Preparation steps
1.
Saute shallots and garlic in hot oil. Add spinach and deglaze with a dash of white wine. Pour in cream and boil down. Stir in parsley and puree the sauce briefly. Add creme fraiche and season with salt, pepper and nutmeg.
2.
Top cold pork slices with lukewarm sauce.
3.
Serve with mixed salt if desired.
