- 1 Tbsp olive oil
- 1 Zucchini (diced)
- 1 small onion (finely diced)
- 2 cloves garlic cloves (minced)
- 3 Sage (finely chopped)
- 53 ozs whole chicken (boiled, skin and bones removed and 250ml of broth reserved)
- 1 cup Bell pepper (cut into large chunks)
- salt
- peppers
- 1 gelatin
- ½ lemon (juiced)

Preparation steps
1.
Heat the olive oil in a sauté pan over medium heat. Add the courgette, onion, garlic and sage. Cook until the onions are soft. Allow to cool.
2.
Tear the chicken into large pieces and place in mixing bowl. Add the onion and courgette mixture along with the yellow peppers. Season to taste with salt and pepper.

In a small saucepan dissolve the gelatine in the reserved broth. Add the lemon juice, stirring well.
4.
Place the chicken mixture into a terrine. Press down on the mixture and then pour in the gelatine until it comes to the top of the meat. Cover with clingfilm and refrigerate overnight.
5.
Turn out, remove any clingfilm and serve on a platter.
