Cold Cucumber Soup with Cod

- 500 grams Cod
- juice of lemons
- ½ Cucumber
- 700 grams Diced tomatoes (peeled and seeded)
- 3 garlic cloves
- 1 small red onion
- 3 Tbsps chopped parsley
- 2 Tbsps chopped mint
- 1 green Bell pepper
- 1 red chili pepper
- 20 milliliters Sherry vinegar
- 100 milliliters olive oil
Preparation steps
Rines the cod, pat dry, cut into thin strips and season with salt. Sprinkle with the lemon juice, mix well, cover marinated about 1 hour in the refrigerator.
Rinse the cucumbers, peel, cut in half lengthwise, remove the seeds and dice. Puree the cucumber peel and seeds and set aside. Puree approximately half of the tomatoes and also set aside. Rinse the peppers, peel with a vegetables peeler, cut in half, remove the seeds and dice. Peel the onion and dice. Rinse the chile, remove the seeds and finely chop. Peel the garlic, finely chop and mix with onion, chile and vinegar.
Mix the cucumber, tomato and peppers, stir in the cucumber and tomato puree, mix in the vinegar mixture, stir in the oil and season with salt and pepper and the herbs. Refrigerate for 1 hour.
Serve the soup with the marinated cod in jars or serving bowls.
