- 2 onions
- 1 ⅕ liters Vegetable broth
- 1 tsp pink peppers
- 250 grams Spinach
- 125 grams Buffalo mozzarella
- salt
- freshly ground peppers
- shaved Parmesan (for garnish)

Preparation steps
1.
Peel and chop onions. Add to the vegetable stock with pink pepper. Simmer 5 minutes. Rinse spinach and add to the soup. Simmer a few more minutes. Season with salt and pepper.
2.
To serve, spoon into bowls. Sprinkle with mozzarella and Parmesan cheese.
