2 kilograms clam
2 shallots
1 garlic clove
4 fresh bay leaves
½ bunch parsley
3 Tbsps olive oil
200 milliliters white wine
salt
peppers (freshly ground)

Preparation steps

Rinse the clams thoroughly.

Peel and finely chop the shallots and garlic.

3.

Rinse the parsley, shake dry, pluck the leaves and coarsely chop. Reserve the stems for the broth.

Heat the oil in a skillet. Add the shallots and garlic, and sauté until translucent. Stir in the parsley stems, bay leaves, wine and clams. Season with salt and pepper to taste, and cover and simmer until the clams have opened, about 8 minutes. Discard the unopened mussels. Sprinkle with the chopped parsley and serve.
