Citrus Jelly Cubes

Ingredients
- For the orange jelly
- 30 grams sugar
- Limes (juice)
- 3 sheets gelatin
- 150 milliliters fresh squeezed Blood orange juice
- For the lime jelly
- 80 grams sugar
- 1 Lime (juice)
- 8 sheets gelatin
- 500 milliliters fresh squeezed Limes
Preparation steps
For the orange jelly: Mix the sugar with the lime juice and bring to a boil.
Soak the gelatin in cold water until soft, about 10 minutes. Sitr 50 ml of the orange juice in the syrup. Stir in 50 ml of the orange juice into the syrup. Squeeze the excess water from the gelatin and dissolve the in the hot liquid and add the remaining orange juice.
Thinly spread the mixture into 1-2 ice cube tray. Chill for about 30 minutes until they start to set.
For the lime jelly: Bring the sugar with the lime juice to a boil. Soak the gelatin in cold water until soft, about 10 minutes. Squeeze the excess water from the gelatin and dissolve in the hot lime juice. Pour and spread this mixture on the orange jelly. Chill for about 4 hours. To serve, plunge briefly in hot water and then turn out.
