- 2 ⅓ cups ground Turkey (very fine)
- 1 egg yolk
- 1 Tbsp breadcrumbs
- 2 slices day-old white bread (cut into very small pieces)
- 1 Tbsp butter
- 1 Tbsp fresh parsley (chopped)
- 2 Tbsps vegetable oil
- 4 Lettuce (e. g. Lollo bionda)
- 4 Rolls (sliced horizontally)
- 4 Tbsps Mayonnaise
- 4 Tbsps Cranberry (from a jar)

Preparation steps
1.
Knead together the turkey mince, egg yolk and breadcrumbs to make a mixture that is easy to shape. Season with salt and ground black pepper, then shape into four burgers.

Fry the white bread in hot butter until golden brown. Sprinkle over the parsley and drain on kitchen paper.

Fry the burgers in a pan in hot oil on both sides for 5-6 minutes.

Put a lettuce leaf and a burger on the base of each roll. Spread with mayonnaise and top with the fried bread mixture. Spoon over a few cranberries, top with the other half of the roll, and serve.
