- For the ice cream
- ⅔ cup Dark chocolate (70% cocoa solids, chopped)
- ⅔ cup milk
- 1.333 cups cream (48% fat)
- 2 cups mini Marshmallow
- ⅔ cup chocolate fudge (chopped)
- 0.333 cup crumbled Chocolate cookie
- 2 Tbsps sliced almonds
- For the sauce
- ½ cup caster sugar
- 5 Tbsps water
- 1 ¼ cups plain Chocolate (70% cocoa solids, chopped)
- 2 Tbsps unsalted butter

Preparation steps
1.
Heat the chocolate and milk in a pan over a low heat, stirring until the chocolate has melted. Set aside to cool.

Whisk the cream until starting to thicken, then gradually whisk in the chocolate mixture until smooth. Churn in an ice cream maker or spoon into a freezerproof contianer, cover and freeze until ice crystals form around around the edges and whisk until smooth.

Stir the remaining ingredients into the ice cream and freeze until firm.

For the sauce: Heat the sugar and water in a pan until the sugar has dissolved. Stir in the chocolate until melted, then add the butter and stir until melted. Do not boil. Set aside until warm.
5.
Scoop the ice cream into sundae glasses and spoon over the warm sauce.
