- For Chocolate Mousse
- 1 pkg chocolate Instant pudding (100 g | 3.5 oz)
- ½ tsp Coffee powder
- 4 cups heavy whipping cream
- For Pancakes
- 2 cups all-purpose flour
- 2 cups milk
- 6 eggs
- ½ tsp salt
- 1 Tbsp granulated sugar
- ¼ cup butter (melted)
- To Serve
- 3 cups fresh Strawberries (rinsed; hulled and halved)
- 4 sprigs fresh mint
- powdered sugar (for sprinkling)

For Chocolate Mousse:

In a large bowl, combine pudding mix and coffee powder. Stir in 2 cups heavy cream and mix until mixture is smooth. Whip remaining cream until stiff peaks form. Gently fold cream in chocolate pudding mixture, blending thoroughly. Cover and chill for several hours or overnight.

For Pancakes:

Mix all ingredients in a blender until smooth. On a lightly greased hot griddle, pour batter by 1/3 cupfuls on prepared griddle. Cook until set, bubbles will appear in batter and bottom with be lightly browned, about 1 to 2 minutes. Gently turn and cook for about 1 minute longer.

Spread chocolate mousse on top of each pancake and carefully roll.

Serve with fresh strawberries. Garnish with fresh mint and sprinkle pancakes with confectioners' sugar.
