20 grams cornstarch

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Separate the eggs between 2 bowls. Beat the egg yolks with half the sugar until thick and foamy. Beat the egg whites with a pinch of salt until stiff. Continue beating, while adding the remaining sugar 1 spoonful at a time, until very stiff and glossy. In another bowl, stir the flour with the cornstarch and cocoa powder. Gently fold the egg whites into the egg yolk mixture. Fold the flour mixture into the egg mixture until thoroughly combined.

Place Christmas tree cake rings on a parchment-lined baking sheet. Fill with the cookie dough. Bake for 12 minutes until an inserted toothpick comes out clean. Remove from the oven, allow to cool,  remove the cakes from the rings with a sharp knife and allow to cool completely. Serve dusted with powdered sugar.
