- 2 ½ cups water
- 1 Vanilla bean (cut in half lengthways, seeds scraped out)
- 2 cups brown sugar
- 3 Tbsps cocoa powder
- 1 Tbsp instant Coffee
- ⅜ cup Liqueur
- grated Chocolate

Preparation steps
1.
Place the water and the vanilla seeds in a pot with the sugar and boil until the sugar dissolves.
2.
Mix the cocoa powder with 3 tbsp cold water, pour into the pot and bring to the boil. Remove the pot from the heat, stir in the coffee and the chocolate liquor and leave to cool.
3.
Pour the mixture into an ice cream maker and leave to freeze. If you do not have an ice cream maker pour the mixture into a metal bowl and freeze for four hours. Stir the mixture every 30 minutes.
4.
Serve the sorbet in glasses sprinkled with the grated chocolate.
