8 ozs Rice noodles
1 Tbsp vegetable oil
½ inch fresh ginger (sliced)
2 carrots (very thinly sliced)
8 Baby Corn
2 Tbsps light soy sauce
1 Tbsp Lime juice
1 Tbsp sesame oil
12 ozs Cooked chicken (sliced)
1 cup Bean sprout
4 scallions (thinly sliced)
salt
peppers
To garnish

Lime wedge

Preparation steps

1.
Place the rice noodles in a large bowl and cover with boiling water. Leave to stand for 3-5 minutes, or according to the packet instructions. When the noodles are just tender, drain thoroughly and return to the bowl.

Heat a wok over high heat and add the oil. When the oil starts to smoke, add the ginger slices and stir-fry for a few seconds. Add the carrots and corn cobs with a small splash of water and cook for a further 5 minutes, until tender but still a little crunchy. Season to taste with salt and put into the bowl.

Mix together the soy sauce, lime juice and sesame oil. Add to the noodles with the chicken, bean sprouts and spring onions. Season to taste and toss together to mix.
4.
Garnish with coriander and lime wedges and serve with peanuts.
