5 cups chicken stock
8 large Chinese cabbage (shredded)
1 cup Baby spinach
1.333 cups Baby corn (sliced lengthways)
1 Tbsp light soy sauce
2 Tbsps dark soy sauce
2 Tbsps dry sherry
2 tsps caster sugar (superfine)
2 tsps sesame oil
To garnish
fresh ginger (peeled and shredded)

Preparation steps

1.
Put the chicken stock into a pan and bring to a simmer.
2.
Add the Chinese leaves, spinach leaves and baby corn and simmer for 3 minutes.
3.
Add the light and dark soy sauce, dry sherry and sugar and simmer for 5 minutes.
4.
Season with salt and ground black pepper and the sesame oil.
5.
Ladle into bowls and garnish with ginger.
