- 1 slice white bread
- garlic cloves
- 1 Red Tomato
- 500 grams yellow Tomatoes
- 200 grams Cucumber
- 250 milliliters Vegetable broth
- salt
- freshly ground peppers
- 1 Tbsp white balsamic vinegar

Preparation steps
1.
Tear bread into small pieces and soak in a bowl of room temperature water.

Peel and press garlic through a garlic press. Rinse, core, quarter and remove seeds from tomatoes. Cut tomatoes into small cubes and set aside a small amount of the red tomatoes. Peel cucumber, cut in half lengthwise, remove seeds and cut into small cubes. Set aside a small amount.
3.
In a blender, roughly puree cucumber, bread (squeezed to remove water), garlic, vegetable broth and tomatoes. Add additional broth if needed. Season with salt, pepper and vinegar.
4.
Ladle gazpacho into bowls and chill one hour. Serve sprinkled with reserved tomato and cucumber cubes.
