- 2 cups canned Tomatoes
- ½ red pepper (seeds removed)
- ½ Cucumber (chopped)
- 1 Tbsp balsamic vinegar
- 1 Tbsp cilantro
- 1 scallion (chopped)
- 1 garlic clove (peeled)
- Chili sauce
- crushed Ice
- To garnish
- 2 cilantro

Preparation steps
1.
Open the can of tomatoes and tip into a blender. Roughly chop the pepper and add to the blender with the cucumber.
2.
Add the balsamic vinegar, coriander, spring onions, garlic and chili sauce. Blend everything together with a couple of handfuls of crushed ice.
3.
Pour into 2 glasses and garnish each one with a watercress sprig.
