400 grams chickpeas
2 tsps canned Vegetable broth
1 bunch Arugula
2 Lemon thyme
1 onion
1 garlic clove
1 Tbsp butter
3 eggs
½ tsp Curry powder
1 tsp lemon juice
salt (pepper)

Preparation steps

Soak the chickpeas overnight in 3/4 liter (approximately 3 cups) water.

The next day, cook the chickpeas in 1/2 liter (approximately 2 cups) of the soaking water and the vegetable broth for1 hour.

Peel the onion and garlic, chop finely and sauté in butter.

Pluck the thyme leaves from the stem and finely chop with half of the arugula leaves. Puree the chickpeas with the eggs and herbs, then add onions and garlic, mix vigorously and season with salt, pepper and curry.

Use two spoons to create quenelles from the mixture. Heat the fat in a pan and fry the quenelles over medium heat for 5 minutes, then drain on a kitchen towel. Place the quenelles on a plate, sprinkle with lemon juice and garnish with remaining arugula.
