- 1 roll Goat cheese (200 grams)
- 4 ripe Tomatoes
- 5 scallions
- ½ bunch parsley
- 2 lemons (preserved)
- 2 cans chickpeas (each 400 grams)
- 5 Tbsps Canola oil
- 1 organic lemon (juiced)
- salt
- freshly ground peppers
- 1 tsp Curry powder
- 100 grams Peanuts (unsalted)

Preparation steps

Cut goat cheese into slices of equal size, about 1.5 cm (approximately 1/2 inch). Rinse tomatoes, quarter, remove the stalks and seeds and cut into thin slices. Rinse the scallions, shake dry, trim and cut into rings. Rinse the parsley, shake dry and chop coarsely.

Drain preserved lemon and chickpeas well and cut the preserved lemons into small pieces. Combine all ingredients in a bowl and mix together. For the vinaigrette, mix canola oil with the lemon juice, season with salt, pepper and curry powder and fold into the salad. Arrange on 4 plates, top with 1 goat cheese slice and serve sprinkled with peanuts.
