- 1 chicken (about 1.2 kg)
- 1 handful thyme
- 4 organic lemons
- 4 garlic cloves
- salt
- freshly ground peppers
- 4 Tbsps olive oil
- 2 Tbsps honey

Preparation steps

Preheat a convection oven to 180°C (approximately 350°F).

Rinse the chicken, then pat dry. Remove some leaves from the thyme, then place under the skin of the chicken. Cut the lemon into wedges, and peel the garlic cloves. Add half of the lemon, thyme (minus 4 sprigs), and garlic to the cavity of the chicken. Season with salt and pepper. Add the remaining lemon to a baking dish, and place the chicken on top of it. Season with salt and pepper, drizzle with olive oil, then top with the remaining thyme. Add a little water to the pan. During the last 10 minutes, brush with the honey.
