Ingredients

For the chicken
2 Chicken breasts (each about 140 grams)
2 Tbsps Coconut oil
1 handful finely chopped cilantro
salt
freshly ground peppers
1 splash lemon juice

Preparation steps

For the crepes, mix eggs, salt, flour, butter and coconut milk powder to a smooth batter. Cover batter and let rest about 10 minutes.

For the chicken, rinse chicken, pat dry and cut into strips. In a pan, sauté chicken in coconut oil until golden brown. Remove pan from heat, stir in cilantro leaves and lemon juice and season with salt and pepper.

To fry crepes, heat coconut oil in a small pan. Thinly pour batter into pan, turning pan to even batter. Fry until golden brown on both sides, 1-2 minutes. Repeat with remaining batter, finishing with 8 crepes. To serve, overlap 2 crepes on plates or in champagne flutes. Top crepes with chicken and roll or fold as desired.
