- 1 onion
- 1 sprig Lemongrass alternatively, 1 piece lemon zest)
- 1 Tbsp butter
- 1 l Chicken broth (Homemade or instant)
- 2 carrots
- ½ stalk Leeks
- 100 grams shiitake mushrooms
- salt
- freshly ground peppers
- ½ tsp ground ginger
- 2 Tbsps sherry
- Chives or cilantro (for sprinkling)
- 4 sprigs Lemongrass (for garnish)

Preparation steps

Peel and coarsely chop onion. Remove outer leaves of lemongrass, then cut it into 4 cm (approximately 1.5 inch) pieces. Crush pieces by rolling over them with a rolling pin a few times. In a pot, sauté onion in butter, 2-3 minutes. Add broth and lemongrass, bring to a boil and simmer about 15 minutes.

Rinse carrots and leek and wipe mushrooms clean with a paper towel. Peel carrot and cut into thin strips. Trim leek and cut crosswise into rings. Slice mushrooms as required. Strain broth through a sieve into a new pot. Reheat and season with salt, pepper, ginger, and sherry. Add carrots, leek, and mushrooms and simmer 3-5 minutes. Sprinkle with herbs and lemongrass and serve immediately.
