Chicken and Pumpkin Cakes
Coarsely grate 400 g pumpkin. Crumb 8 slices wholemeal bread. Peel and finely chop 6 shallots. Wash and finely chop 50 g parsley, reserving a few leaves to garnish. Sweat the shallots in 1 tsp oil. Add 3-4 tsp masala, remove from the heat and leave to cool.
Mix the pumpkin, breadcrumbs, shallots, parsley, 500 g minced chicken, 2 eggs, salt and pepper and 3-4 tbsp flour. Make 16-20 patties and fry in the remaining oil for 4 minutes each side
Serve with mango wedges
