- 1 ½ cups all-purpose flour
- 1 tsp Baking powder
- ½ tsp salt
- 2 Tbsps lemon zest
- 2 Tbsps Orange zest
- 2 large eggs
- ⅔ cup sugar
- 4 Tbsps unsalted butter (melted)
- ¼ cup olive oil
- ⅓ cup Whole milk
- ½ tsp vanilla extract
- 3 cups fresh Cherries (rinsed, stemmed and pitted)

Preparation steps
1.
Preheat over to 425º F / 220º C. Generously butter and flour a springform pan. Set aside.
2.
Sift the flour, baking powder and salt into a large bowl. Toss grated zests into the mixture and whisk to incorporate. Set aside.
3.
With an electric mixer, beat the eggs and sugar until thick and lemon-colored, about 2 minutes. Add melted butter, olive oil, milk and vanilla and mix until blended.
4.
Add flour mixture, all at once. Mix gently with a wooden spoon until well incorporated. Combine 3/4 of the cherries into the batter and spoon into the prepared pan. Bake for 15 minutes, then sprinkle with the remaining cherries.
5.
Lower the oven temperature to 350º F / 175º C. Bake 45 to 50 minutes longer, or until cake is golden and firm. When cooled, dust with powdered sugar and serve.
