- 7 ozs Puff pastry
- 1 cup grated Parmesan
- 1 egg (beaten)
- To finish
- 1 Tbsp finely grated Parmesan
- paprika
- freshly ground Black pepper
Preparation steps
1.
Roll out the pastry thinly on a lightly floured surface.

Scatter with 1/3 of the cheese and roll it firmly into the pastry, then fold the pastry in half and roll out again to about the same thickness. Repeat the process twice more with the other 2/3 of the Parmesan, then roll out about 2mm thick.

Brush with beaten egg and scatter with the tablespoon Parmesan and a little paprika and black pepper. Chill for 30 minutes.

Heat the oven to 200°C (180° fan) 400°F gas 6. Line a large baking tray with non-stick baking paper.
5.
Cut the pastry into strips 1/2cm wide x 18-20cm long. Twist each end of the strips in opposite directions until evenly twisted, then place on the baking tray.
6.
Bake for 8-10 minutes, until golden. Place on a wire rack to cool completely.
