- 2 cups Edam cheese (cut into thin slices)
- 1 ⅓ cups soft, fresh Cheese (e. g. cream cheese)
- 2 Tbsps Yogurt
- 1 red pepper
- salt
- freshly ground peppers
- In addition
- ¾ cup grated Edam cheese
- paprika

Preparation steps
1.
Lay out the slices of cheese, overlapping slightly, to form 2 rectangles.

Mix the cream cheese smoothly with the yoghurt and season with salt and pepper. Set aside 4 tbsp of the mixture.
3.
Wash, trim, halve, core and finely dice the red pepper. Stir the diced pepper into the cream cheese mixture. Then spread half of the mixture on each rectangle of sliced cheese and roll up. Coat the outside of the roulades with the reserved cream cheese mixture, roll in grated Edam and dust with paprika. Chill well before serving.
