2 Tbsps freshly chopped Wild garlic (wild garlic, Allium ursinum)
1 ¾ cups soft Herb cheese

8 slices Bacon
8 wooden Skewer
4 Tbsps olive oil
1 tsp freshly chopped rosemary
1 tsp freshly chopped thyme

If you do not like ramsons, use two peeled and pressed garlic cloves instead. For a vegetarian dish, simply omit the bacon.

1 Cutting board, 1 Serrated knife, 1 Small knife, 1 Tablespoon, 1 Toaster, 1 Parchment paper, 1 Teaspoon

Preparation steps

Clean the mushrooms with a damp cloth and twist out the stalks. Finely chop the stalks and mix with the soft cheese and ramsons. Season to taste with salt and pepper.

Halve the bacon slices (depending on size) and wrap 16 mushrooms in a piece of bacon. Stuff the mushrooms with the herb soft cheese. Thread 4 mushrooms on each skewer with the top of the cap facing to the left, then thread a fifth mushroom on the skewer the other way round so that it will hold the stuffing in. The second and fourth mushrooms on each skewer should be wrapped in bacon.

Mix the olive oil with the rosemary and thyme. Lay the mushroom skewers on a preheated barbecue and brush with the herb oil. Cook for about 10 minutes over a medium heat, turning several times and brushing frequently with the herb oil. Serve immediately.
