Cheese and Cashew Pastry
Preparation steps
Make a mound of flour in the center of the work surface. Mix with the Parmesan and salt. Make a well in the center of the flour. Cut the cold butter into small pieces and distribute through the flour. Place the egg in the center with about 2-3 tablespoons of lukewarm water. Chop through the ingredients with a knife, so that the liquid is spread through the flour. Knead the dough into a ball, wrap in plastic and chill for 30 minutes.
Form the dough into small balls. Slightly flatten and place on a parchment-lined sheet tray, with enough distance in between. Press half a cashew into each of the pastries. Beat the egg yolk with the water and brush on the surface of the pastry. Bake at 200°C (approximately 400°F) for about 12 minutes. Remove from the oven and let cool.
Serve once cooled, with wine.
