- 1 Tbsp Hoisin sauce
- 2 Tbsps Rice wine (or dry sherry)
- 1 tsp Orange juice
- ½ tsp Corn starch
- 3 cups duck legs (finely shredded)
- 2 Tbsps Nut oil
- 2 cloves garlic cloves (crushed)
- 5 sticks Celery (cut into matchsticks)
- 2 scallions (trimmed and shredded)
- 1 red pepper (seeds removed and cut into thin strips)

Preparation steps
1.
Put the hoisin sauce into a sealable container. Add the rice wine or dry sherry, orange juice and cornflour. Stir in the duck to coat int he marinade. Cover and chill for 1 hour.

Heat the oil in a wok or large skillet (frying pan) and add the garlic and marinated meat, gradually, keeping the heat high and stir frying all the time. Cook for about 5 minutes until no longer pink.
3.
Add the celery, spring onions and pepper and stir fry for 2 more minutes, to heat, yet retain some vegetable crunchiness.
