- ⅔ cup Margarine (softened)
- ⅔ cup superfine caster sugar
- ⅔ cup gluten-free self-rising flour (sifted)
- 2 Tbsps Corn starch
- 3 large eggs
- 1 pinch ground cloves
- 1 pinch salt
- 2 small carrots (peeled and finely grated)
- 1 tsp vanilla extract
- 2 cups Walnut
- 1 ½ cups cream cheese
- ½ cup unsalted butter (softened)
- 1 cup powdered sugar (sifted)

Preparation steps
1.
Preheat the oven to 180°C(160° fan)|350F|gas 4. Grease and line two 18 cm | 7" cake tins with greaseproof paper.

Combine the margarine, sugar, flour, cornflour, eggs, cloves, and salt in a large mixing bowl. Beat thoroughly for 2-3 minutes until smooth.

Add the carrots, vanilla, and half of the walnuts. Fold into the batter until incorporated.
4.
Divide the batter between to the two prepared tins, spreading the tops smooth.
5.
Bake for 20-25 minutes until risen. A cake tester should come out clean from their centres.
6.
Remove to to a wire rack to cool.
7.
Beat together the cream cheese, butter, and icing sugar until smooth. Turn out the sponges and spread the top of one with a third of the icing.
8.
Sandwich the other sponge on top and spread with the icing. Garnish with the remaining walnuts before slicing and serving.
