- For the pancakes
- ½ cup unsweetened apple sauce
- 5 Tbsps oat flour
- 1 Tbsp Agave syrup
- 2 tsps Baking powder
- 1 pinch salt
- 1 cup Almond milk
- non-fat cooking spray (for frying)
- For the filling
- 1 ⅓ cups Ricotta cheese (20 % fat)
- ¼ cup Sour cream
- ⅞ cup full fat Coconut cream (from the top of a chilled can)
- 1 tsp vanilla extract
- 2 Blood orange
- 2 Navel Orange
- 2 Banana
- 1 Passion fruit
- powdered sugar (for dusting)

Preparation steps
1.
Mix the baking powder and flour. Add the agave, applesauce and salt and then beat in the milk. Leave to stand for 20-30 minutes.

Spray the pan over a medium heat. Then pour a little of the pancake mixture into the pan and tilt carefully to coat the bottom of the pan thinly and evenly with the mixture.

When the surface is dry, turn carefully and fry the other side until nicely browned. Makes 6-8 thin crepes

Peel the oranges with a sharp knife, removing the white pith and skin. Then cut out the segments avoiding the skin and membrane. Catch any juice.

Peel and slice the bananas. Wash and halve the passion fruits and scoop out the flesh.
6.
Whip the coconut cream. In a separate bowl mix the ricotta cheese, sour cream, vanilla extract. Fold in the bananas.
7.
Fold the crepes into half or quarters and put on plates. Add a spoonful of cream and top with orange segments and passion fruit flesh. Dust with icing sugar.
