Cabbage Parcel Bake
Immerse cabbage leaves in boiling salted water and let blanch for 5 minutes. Drain and let cool.
Cook rice in boiling salted water for the amount of time specified on the packet, then drain when done.
Heat 3 tablespoons of oil in a skillet and add the onions and saute for two minutes while browning. Add the meat, rice, salt, pepper and parsley. Cook for 5 minutes while stirring.
Preheat the oven to 200°C | 400F | gas 6.
Oil a baking dish, and spread the cabbage leaves out in pairs. Fill them with the meat and rice and close them up in order to form the pannequets.
Put them in the dish, drizzle with oil, add the chopped tomatoes and bake for 20 minutes. Serve straight from the oven.
