- 12 large, white Chinese cabbage
- 3 ⅓ cups Fish (e. g. cod, coalfish, finely diced)
- 2 scallions (finely sliced into rings)
- 1 red chili pepper (finely chopped)
- 1 clove garlic cloves (finely chopped)
- ¾ inch fresh ginger (finely chopped)
- Coriander
- 2 Tbsps melted butter

Preparation steps

Preheat the oven to 190°C (170°C in a fan oven), 375°F, gas 5.

Blanch the cabbage leaves in salted water for 2-3 minutes, then quench in cold water and pat dry. Cut any hard stalks to flatten.

For the filling, mix together the fish, spring onions, chilli, garlic and ginger and season with salt, ground black pepper and a pinch of coriander.
4.
Put 1-2 tbsp of filling in the centre of each cabbage leaf and form into small pouches. Fix with cocktail sticks. Put the pouches next to one another in a buttered baking dish and brush with the remaining butter. Bake in the oven for 15-20 minutes.
